Put the meat in a large sealable freezer bag.
Add lime juice, lemon juice, lime rind, olive oil, cloves, salt, black pepper, oregano, chili powder, cumin powder, and ChoneTM Hot Sauce to the freezer bag.
Massage meat and mixture inside the freezer bag.
Marinate the meat in the freezer bag overnight in fridge.
Remove from fridge 1 hour before cooking.
Remove meat from bag and cook on a BBQ (with smoker).
Cook over low flame with BBQ lid closed for 10 minutes.
Flip meat over, and baste in remaining marinade.
Cook over low flame with closed lid for another 10 minutes.
Remove meat from BBQ, and let stand for 10 minutes under foil.
While meat is finishing, place corn tortillas on grill.
Flip tortillas over after 1 minute.
Sprinkle the heated side (now the top) of tortillas with 1 tbs of shredded cheese.
Cook until the cheese melts (about 1 minute).
Remove tortillas from grill, fold in half, and and place in a tortilla warmer.
Chop the meat into bite size pieces on a cutting board.
Serve the meat hot in the corn tortillas.
Garnish with white onions and cilantro.
Add ChoneTM Red Sauce to tacos to taste.
Serve with ChoneTM Refried Beans and rice.
