We used the whole lime, including the zest in this blend, giving the sauce a strong limey aroma, a wild green color, and a thick texture. The locally grown lime induces an immediate pucker as it hits your tongue. Ripe Green Thai chile brings an enjoyable heat, and puts its intensity in the mid range of our sauces. Yellow Chone Peppers create a complex peppery finish. Like all of our sauces, there are no gums, sugars, or extracts.
